I’ve been baking again. The niece and nephew were round today so we made bread. My nephew announced that he thought kneading bread dough was fun.
Recipe
12 oz Spelt flour
12 oz Rye flour
1 sachet quick yeast
1 teaspoon each of rosemary, basil and thyme
2 teaspoons salt
1 oz butter
3/4 pint warm water
Weigh out the flour in to a bowl, add the other ingredients and mix in to a dough.
Turn out on to a floured surface and knead for ten minutes.
Divide in to a equal(ish) sized balls and place on baking tray. Cover and leave in a warm place until the dough balls have doubled(ish) in size.
Gas mark 8 for fifteen minutes.
Tap the bottoms, if they sound hollow they’re cooked.
The rolls are quite dense, but no more than the average homemade wholemeal bread would be. The herbs give a different flavour to the bread; they make nice sandwiches with ham salad or cheese.
